Cilantro Lime Black Bean Rice

Ingredients

Rice Package

  • 1 c jasmine rice

Cilantro Lime Sauce Package

  • 2 tbsp cilantro
  • 2 tbsp lime juice
  • 2 tsp lime zest

Black Bean Package

  • 1/4 c black bean

Instructions

Package Rice

  • Package rice in a sealed container.

Package Cilantro Lime Sauce

  • Combine cilantro, lime juice and lime zest. Package in a small container.

Package Black Beans

  • Package black beans in a sealed container.

Make Rice

  • Using a lidded pot, rinse rice exchanging the water 2 or 3 times. Drain water from rice.
  • Using the cup the rice came in, fill with water to the fill line and pour in with the rice, repeat a second time. Bring to a boil over medium-high heat. Cover and reduce heat to low and cook rice until tender and all liquid is absorbed (approximately 15 minutes).
  • Turn off heat and fluff with a fork. Stir in the cilantro mixture.

Warm Black Beans

  • Reheat black beans in the microwave (approximately 1 minute).

Serve

  • Divide and serve. (If desired, black beans can also be mixed in with the cilantro rice.)
