Ingredients

Fajita Seasoning Ingredients

  • 2 tbsp chili powder
  • 2 tbsp paprika
  • 2 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Chicken Package

  • 1 lb chicken diced
  • 1 tbs olive oil
  • 1/4 c broth concentrate
  • 2/3 fajita seasoning

Chopped Vegetables Package

  • 2 c mixed bell peppers
  • 1 c yellow onion
  • 1 tbs olive oil

Tortilla Package

  • 4 tortillas

Pico Package

  • 6 oz pico

Cheese Package

  • 1/2 c shredded cheese

Miscellaneous Package

  • 2 limes

Instructions

Prepare/Package Chicken

  • Dice the chicken. Mix with broth, oil, and fajita seasoning. Package in a sealed package.

Prepare/Package Veggies

  • Cut the vegetables julienne style. Toss with oil and package in a sealed package.

Package Tortillas

  • Package in a sealed package.

Package Pico

  • Package pico in a sealed container.

Package Cheese

  • Package cheese in a sealed container.

Package Lime

  • Put in bag.

Cook Chicken and Veggies

  • Preheat oven to 350 degrees f. You may also use a grill.
  • Place bag of vegetables and bag of chicken in a cake pan mixed together. Squeeze 2 lime wedges over the mixture. Put pan in oven or on the grill for 20 minutes. Stir after 10 minutes.

Warm up Tortillas

  • Warm tortillas on a 9x13 pan for a few minutes.

Serve

  • Divide fajita mixture onto tortillas and serve with lime wedges and pico.
