Veggie Rice Pilaf

- 3/4 c jasmine rice
- 1/2 zucchini
- 1 carrot
- 1 1/2 tbsp oil
- 1 5/8 c water
- 1 vegetable broth concentrate
- 1 tsp salt
- 1 tsp pepper
Cook Rice
Rinse rice with cold water 2 or 3 times and drain.
Add veggie mixture to pot and cook over medium heat until warmed, 1-2 minutes.
Add broth and 1 ⅝ c water to saucepan, stir. Bring to boil stirring occasionally. Cover and reduce heat to low for 15 minutes or until water has been absorbed and the rice is tender. Turn off heat and let stand for 5 minutes.
