Fajita Seasoning Ingredients
- 2 tbsp chili powder
- 2 tbsp paprika
- 2 tsp cumin
- 1 tsp coriander
- 1/2 tsp salt
- 1/2 tsp pepper
Pickled Onion Package
- 1/2 c red onion very thinly sliced
- 5 tsp vinegar
- 2 tsp sugar
- 1 tsp salt
- 1 tbsp water
Onion/Poblano Package
- 1/2 c red onion chopped
- 1/2 poblano pepper
- 4 tsp oil
- 1 tsp salt
- 1 tsp pepper
Seasoning Package
- 1/2 tbsp fajita seasoning
- 1 chicken broth
- 1 1/2 tbsp tomato paste
- 2 tbsp water
Crema Package
- 2 tbsp sour cream
- 1 lime squeezed
- 1/2 tsp salt
- 1/2 tsp pepper
Prepare/Package Pickled Onions
Cut and peel onion. Finely chop 1/2 cup; very thinly slice 1/2 cup. Set chopped onions aside.
Combine sliced onion, vinegar, sugar, salt, and 1 tbsp water. Toss until sugar and salt are mostly dissolved. Package in a sealed package/container.
Prep/Package Onion/Poblano
Core, deseed, and finely chop poblano. Combine chopped onion and poblano with oil, salt, and pepper. Package in a sealed package.
Prep/Package Seasoning
Combine fajita seasoning, stock concentrate, tomato paste, and 2 tbsp water. Mix together and package in a container.
Prep/Package Crema
Combine sour cream, squeeze of lime juice, salt, and pepper. Stir in water, 1 tsp at a time, until mixture reaches a drizzling consistency. Package in a container.
Prep/Package Toppings
Dice tomato. Package in a container.
Package shredded cheese in a sealed package/container.
Roughly chop cilantro. Package in a small container.
Cook Chorizo
Add chorizo to a large pan and cook, over medium-high heat, until browned and cooked through, 4-5 minutes. Break up meat into pieces while cooking.
Turn off heat. Using a slotted spoon, transfer chorizo to a plate. Pour out and discard any excess grease from pan.
Make Filling
Add onion/poblano to pan and cook over medium-high heat. Stirring, until softened, 3-4 minutes.
Return chorizo to pan and add seasoning. Cook, stirring, until everything comes together in a saucy mixture, 2-3 minutes.
Assemble and Serve
Divide filling, tomato, cheese, cilantro, pickled onion, and crema between tortillas to your liking. Cut lime into wedges and serve on the side for squeezing over tacos.
